Solid instructions on all the things you need to know to purchase, season, clean, and cook with the famous portable black kettle known as the "Dutch Oven". I have several of these cookbooks, and this is the only one that so completely covers the differences between "Old Dutch" and "Modern Dutch" cooking. The seasoning, and starting of the cooking process has very detailed instructions that I have never seen in a Dutch cookbook and which I found very helpful.The author also provides instructions on pit cooking and building backyard fire pits for your "Dutch". I really liked this part! I use my black kettle camping, but the backyard pit allows more home cooking.Lots of great recipes, including "rubs" and marinades. I now know how to make biscuits old Dutch style!The author has a wonderful "Do this, never do this" to your "Dutch" chapter which I found very helpful. I also didn't even know about "modern" Dutch...I was taught by my Mother and still use her kettle.The book has a spiral binding, which all cookbooks should have, and it is very "packable".If you find an old Wagner Dutch at a garage sale, buy it no matter how rusted, and this book will tell you how to bring it back to life to cook again!
