REVIEWS
I have this as well as several fry and saute pans (I've had the pans for well over a year). They are wonderful, if a bit expensive. I also have a set of All-Clads (which are of course superb), but I reach for these more often than not unless I'm browning meat. I'll use the All-Clads if I want to produce a fond that has to be scraped up. I follow four rules, though. 1) They say they are dishwasher safe, but I've never done that. I only hand wash them, which is essentially painless, as they almost get clean under running water alone. 2) I never, ever use metal utensils, even though they claim that they're safe. 3) I never put them on heat higher than medium, nor have I ever had to. They're made of very heavy aluminum, so they take a pretty long time to heat up, but that only requires patience. This is a negative, though, in that it responds quite slowly to changes in stove settings. 4) I never use non-stick spray, which they specifically warn against. I'll probably spring for some smaller pots in the near future (update: which I've done, but I haven't used them yet). Other than that, they're cookware. It's only when they don't work well that you notice. They don't scorch (or haven't yet), and function so well that they're almost boring.Again, the negative is the slow response to changes in heat settings. It also isn't induction compatible, though they state that in the product description and other reviewers have noted it. They do make an induction-compatible line, but since I don't do that I haven't investigated them.Update: I made a big batch of spaghetti sauce in the pot, and had no scorching and an easily controllable simmer. If the surface holds up as well as the pans have, it'll be another winner.
