This process helps to create a natural, non-stick surface on the skillet. To season a cast iron skillet, follow these steps: Clean the skillet thoroughly with hot, soapy water and a stiff brush. Rinse and dry completely.Rub a thin layer of oil (vegetable or melted shortening) onto the skillet, making sure to coat all surfaces, including the handle and outside of the skillet.Place the skillet upside down on the middle rack of the oven. Put a sheet of foil or a baking tray on the bottom rack to catch any drips.Heat the oven to 350°F (175°C) and let the skillet bake for 1 hour.Turn off the oven and let the skillet cool inside the oven.Repeat this process of oiling and baking the skillet 3-4 times to create a good seasoning on the skillet.Once you have completed the seasoning process, it is important to maintain the skillet by using it regularly and oiling it after each use. These are not high end cast iron skillets and they don't pretend to be but for an average cost of $10 per skillet, they are a great deal. One of the skillets had a really good surface, the other two had significant imperfections with the preseasoning. I spent an hour with some sand paper and some elbow grease and got the two surfaces smooth to a reasonable degree. I always season my new cast iron before their first use even if preseasoned. Since these were so cheap, I didn't do that and tried making some scrambled eggs in the best skillet just using a spritz of Canola oil as a lubricate. As expected, not really non-stick, required some real work to get all the food off (I used the oil and kosher salt with a half potato method). I then seasoned all three skillets three times ( just a bit of overkill) before using again. Now as non-stick as some of my better skillets.The handles are longer and thinner than most skillets which makes them cooler when cooking, for fast cooking dishes like eggs, I didn't need any heat protection. But the handle will get hot after a while so be careful and use common sense. The thin profile and sharp edges on the handle may not be as ergonomic as some may like but I intend to use these for camping and I wear welding glove when working with a campfire or charcoal.
